Recipe of the Week: Cottage Cheese Pineapple Muffins

These muffins are light, fluffy, and packed with protein – perfect for a quick breakfast or snack!
Ingredients:
1 cup cottage cheese (low-fat or full-fat)
2 eggs
1/4 cup honey or maple syrup (optional for sweetness)
1 tsp vanilla extract
1 cup canned pineapple tidbits, drained
1 1/2 cups rolled oats (or oat flour for smoother texture)
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
Instructions:
Preheat your oven to 375°F (190°C). Line a muffin tin with liners or grease it lightly.
In a blender, combine the cottage cheese, eggs, honey/maple syrup, and vanilla extract until smooth.
Add the oats, baking powder, baking soda, and salt, and blend again until combined.
Stir in the pineapple tidbits by hand.
Divide the batter evenly between the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Let cool, then enjoy!
